Roots Dining | Autumn 2023
Roots Dining was the preface to the Chefs Table at the Emerald Room. I hosted the 9 course vegan degustation back in 2023 at Jane in Surry Hills.
I highlighted wild foraged and native ingredients on every dish, as well as a curated alcoholic and non alcoholic cocktail pairing which also featured unique flavours like kelp tea, bottlebrush and gin, wattle seed and cascara to name a few.
The experience was intimate, fun and created a sense of bonding between the guests as if they were coming for dinner at my home.
Roots Dining combined my love of community with hospitality, showcasing local artists, ceramicists, producers, bartenders, photographers and more in an experience unlike any other.
From the pleasant aroma of handmade lemon myrtle candles, to hand written envelopes that guided guests to their seat at the Chefs Table, Roots Dining left the diners with an unforgettable experience.
