Darlinghurst is set for a friendly neighborhood pop up when two industry icons combine their talents for a one night only event that showcases ‘NON’ Non Alcoholic Spirits paired with Chef Elijah’s Passion for wild foraged and native ingredients over 4 courses.


On Tuesday the 8th of April, Bar Manager Tom Opie and Chef Elijah Attard come together to host a 4 course vegan degustation paired with 4 ‘NON’ non-alcoholic Cocktails that’ll highlight Australian beveridges and native produce at Darlinghurst’s most intimate corner boutique bar - The Waratah. All for $85.

Tom Opie hails from Wollongong, having moved his way up through Births and Deaths Bar where he showcased Australia’s finest native ingredients in refined cocktails before heading up to the Waratah in Darlinghurst under Evan Stroeve (Ex-Re Bar). Opie has a track record of cocktail competition wins including 2022 Amaro Montenegro Vero, finalist in the 2024 World Class Comp, reaching Australia’s Top 25 Best Bartenders and winner of the 2024 Stauning Drinks Kollektive.
Tom Opie’s philosophy is highlighting the unique native produce Australia has to offer, and his passion has recently geared towards creating the ultimate thirst quenching non alcoholic equivalent to your favourite classics.

Elijah Attard passion for wild food stems from his experience at Wollongongs’ Caveau restaurant whose menu paid homage to it’s local produce farmers and wild forage ingredients that represent the southern coastal landscape. It forced the chefs to create a hyper local menu and work with the weather consistently. From Caveau, Elijah’s love of native ingredients grew at Yellow restaurant, as he sourced to showcase the best and most unique traditional foods in order to really represent what Modern Australian cuisine should be.
Chef Elijah’s experience culminated to his opening of the Chefs Table at the Emerald Room. A 6 seater 7 course vegan degustation with an arrival chefs cocktail that opened with sold out seats months ahead.
In 2024 he won Australia’s Best Bar Food Menu. Elijah has been vegan for 9 years, hence hosting an array of delicious produce forward dishes.

Elijah has since hosted sold out vegan degustation pop ups around Sydney, Melbourne and New Zealand, now joining Tom Opie for an incredible night to remember right here in Sydney.
